Booster BroccoliTM Spanish Frittata

Perfect for a cold winter night, this simple fritatta recipe will be sure to please. Combining the flavours of spanish onion, parsley and capsicum with the goodness of Booster BroccoliTM.

Ingredients
1 Head Booster Broccoli™(cut into florets),
3 Eggs,
250g Smooth Ricotta Cheese,
1 Red Capsicum (sliced),
½ Spanish Onion(sliced),
½ cup Pizza Cheese (grated),
Parsley to garnish

Prep
  1. Broccoli and cut into small florets.
  2. In a large bowl whisk together the egg and ricotta season with pepper.
  3. Arrange the broccoli florets and capsicum into the base of a 24cm shallow greased , oven proof dish or 4 x 8cm shallow individual baking dishes.
  4. Pour over the egg mixture and sprinkle with grated cheese.
  5. Bake the frittata in the pre-heated oven 180c for 18 – 20 minutes 
    untl firm and golden. Allow to rest 5 minutes before serving with your favourite salad.
    Delicious served hot or cold. Potatoes are also a great addition to the dish along with garden herbs.
