Booster BroccoliTM and organic lentil soup

This simple and zesty soup is bursting with colour and combines the goodness of Booster BroccoliTM with the nutty flavous of lentils, lemon zest and tomatoe.

Ingredients
1 Head Booster Broccoli™,
1 Onion, finely chopped,
1 tsp Olive Oil,
1 x 400g Can Organic Lentils, drained,
1 x 400g Can Diced Tomatoes,
½ tsp Italian Seasoning,
½ cup Water,
Chopped Parsley & Lemon Rind to garnish

Prep
  1. Wash Broccoli and cut into small florets , cut stems into small pieces.
  2. Heat oil in a large saucepan and sauté the onion 2 -3 minutes.
  3. Add the lentil, tomatoes , seasoning and water to the saucepan and bring to the boil , reduce heat and simmer 10 minutes.
  4. Add the broccoli to the saucepan and simmer for a further 10 minutes.
  5. Serve hot garnished with chopped parsley and lemon rind and warm crusty bread.
