Booster BroccoliTM and Salmon Phyllo Tart

Combining the goodness of Booster BroccoliTM with a zest of lemon this mouth-watering tart is sure to be a hit at your next dinner party. Delicious served hot or cold.

Ingredients
1 head Booster Broccoli, cut into big florets,
8 Sheets Phyllo Pastry,
Olive Oil Spray,
5 Eggs beaten,
2 Lemons zested and sliced thinly,
1 x 300g Salmon Portion (skinless, sliced thinly),
250g Light Ricotta cheese,
1 Bunch Dill roughly chopped

Prep
  1. Wash Broccoli and cut into large florets.
  2. Lay 1 sheet Phyllo pastry on a dry work surface , keep remaining sheets covered with a damp cloth. Spray the pastry liberally with olive oil spray and cover with another sheet. Repeat the process with all 8 sheets.
  3. Spray a 40cm x 15 cm long shallow baking dish with olive oil. And arrange the pastry sheets over the base over lapping pressing inside firmly to secure.
  4. Arrange broccoli, lemon slices , dill leaves over the pastry layers. Dollop with ricotta and lay the salmon slices decoratively over the surface.
  5. Pour over the beaten egg tand bake in the pre-heated oven 170c for 20 – 25 minutes until pastry is crisp and egg is set. Stir in the cream cheese, season to taste and add the broccoli, Cook for a few minutes to soften the broccoli but do not over cook. The broccoli should remain a bright green colour.
  6. Serve hot for breakfast, lunch or dinner .
