Chilli Almond and Booster BroccoliTM Warm Salad By Dr. Joanna McMillian Price

Healthy and nutritious, the simple flavours within this warm broccoli salad make it the perfect side dish for any occasion.

Ingredients
1 head of broccoli
1 tb olive oil
1 red long chilli, sliced finely
1 clove garlic, crushed
60g slivered almonds

Prep
  1. Cut the broccoli into bite sized floret pieces and finely slice the stalk.
  2. Steam the stalks for a couple of minutes and then add the florets to the pan and steam for further 2 minutes. Do not overcook – the broccoli should still be crunchy. While pasta is cooking, heat the oil in a large flat non-stick pan and sauté the onion and garlic and softened (about 5 minutes).
  3. Toast the almonds in a non-stick frying pan over medium heat. Stir them regularly and don’t leave them as they burn easily. Remove from the pan and set aside.
  4. Add the oil to the pan and sauté the garlic and chilli for a 
    couple of minutes. Add the steamed broccoli, toss to coat and serve immediately sprinkled with the toasted almonds.
