Booster BroccoliTM and Pinenut Salad By Dr. Joanna McMillan Price
Delicious served with grilled steak or chicken, this quick and easy salad is the perfect light meal or side accompaniment. Full of flavour and good nutrition.
Ingredients
Salad:
1 head of broccoli(cut into small florets),
100g semi-dried tomatoes (cut into slivers),
80g toasted pine nuts
Dressing:
3 tb extra virgin olive oil (or avocado oil),
1 tb white balsamic or white wine vinegar,
1 tsp Dijon mustard,
2 tb natural yoghurt

Prepare the salad ingredients and mix well in a bowl.

Whisk together the dressing and pour over the top.

Toss well to coat.
